Honorable mentions because picking only three just isn't fair: Firefly, Star Trek TNG, Space Precinct 2040, Doctor Who, Lost in Space, Starhunter (one of the most "EVE like" shows I've encountered), Battlestar Galactica (original), Babylon 5, and last but certainly not least Lexx.

I agree Firefly is a show that could have gone for much longer than it did. The whole space western theme kinda made sense and the chemistry between the characters was spot on.
